Rice noodles with beef & veggies

Today I bring you a new recipe: rice noodles with beef and veggies!

The rice noodles have rice flour as main ingredient, they provide an excellent nutritional content and also a wonderful texture and presentation.

Made of fine flour of rice and water, these noodles are free gluten free, which make them ideal for celiacs who are addicted to noodles! We can differentiate them by their size in millimeters. For example, the finest ones are very common for salads. This recipe is not only very easy to prepare, it is also incredibly versatile! You can change it using other ingredients you prefer, and if you are vegetarian, this recipe is also amazing using tofu, for example.

As for the rice noodles, you can use the same ones that I have used (big ones), or round and thin if you like those more.

Ingredients (2 servings)

  • 175gr Rice noodles
  • 2 beef steak
  • 1 red pepper
  • 1 green pepper
  • 1 onion
  • 3 tbsp soy sauce
  • 2 cups beef stock
  • Salt & pepper to taste
  • Peanuts
  • 2 tbsp Olive oil

Instructions

  1. Cut the onion, carrots and peppers (matchsticks) and add them in a medium-size pot over medium heat. Sauté for about 5 minutes until browned and add the beef stock.
  2. Meanwhile, cook the noodles according to package instructions.
  3. Cut the steaks into small pieces and cook it in a pan over medium heat for about 4 minutes. (I like to add also the peanuts, so they get more flavor and golden).
  4. Once the meat and noodles are ready, add everything to the pot with vegetables and stir until everything is well combined. Add the soy sauce and stir again.
