    Parmesan garlic noodles

Today I have an easy side dish that I’ve wanted to recreate since I saw it couple of months ago in Happily unprocessed… parmesan garlic noodles. This recipe is beyond easy! These parmesan garlic noodles are possibly the easiest noodles I’ve ever made (and I always try to make very very very easy noodles). I used somen noodles this time, which are very thin, white and made of wheat flour (these noodles are usually served cold, but since i had them at home, i decided to give them a try to create this dish). They only take 3 minutes to cook, which is great to make everything even faster! You…

Zucchini Noodles with truffle oil, shrimps and cherry tomatoes

Today i bring you a fresh and healthy recipe: zucchini noodles with shrimps and cherry tomatoes. This week is (and probably will be) the sunniest and warmest in Amsterdam! So i finally started making gazpacho (i couldn’t wait) and eating healthy and fresh meals. And of course, this recipe is mandatory in a day like this! You can make them in 5 minutes and the variations are endless, which is great! I could eat this every – single – day. As i commented in a prior post, you can buy zucchini noodles directly from the supermarket, although I prefer to use a spiralizer because it is cheaper and I use it…

Veggie Spicy Udon Noodles Stir Fry

Today i bring a recipe that i love… Veggie spicy udon noodles! Let’s enjoy a super tasty udon recipe!  It’s not the first time I post a recipe using this kind of noodles. I’m a huge fan! They are chewy and soft (and it’d be amazing if you can find them fresh). For this recipe i’ve used regular dried udon. The texture changes a little bit using dried noodles, but it’s awesome still! Udon is always a good choice if you want to create strong flavor recipes, as they have a neutral flavor that makes them perfect. This recipe is really creame and tasty, but be careful with the Sriracha…

Little Saigon – My favorite vietnamese in town

Last Saturday I decided to go to this cozy vietnamese restaurant in the China town of Amsterdam with a friend. I already knew Little Saigon because it’s where I always order Pho to take away. They always bring me huge bowls of soup and noodles with a lot of fresh garnish vegetable. I ordered more than 100 times to take away, but believe it or not, never been to the restaurant before, so it was about time, right? Fresh, healthy and tasty, this vietnamese dish is conquering Amsterdam little by little.  Phở Bò Kho was amazing, very authentic broth and really good beef. Everything was served hot and timely, in…
