These creamy lemon tagliatelle are gonna be your next favorite meal for summer! It was my first time making this delicious recipe, and it didn’t dissapoint me! It was super creamy and kinda new flavor to me. I’m not used to make these kind of recipes, so it was about time!
As you already know by now, I would eat ramen everyday or any type of dish that gets my soul warm during the cold days. But with the excuse of good weather, during the last couple of weeks I’m trying to make fresh recipes, especially because i don’t like to feel bloated after eating!
Today I’ve decided to try something more Italian: green tagliatelli.
In Spain we use lemon for almost everything, and pasta is no exception (not for me, at least). So I’ve decided to try this wonderful recipe that I’ve been wanting to make for so long!
Ingredients (2 servings)
- 200gr tagliatelle
- 2 lemons
- 100gr cream cheese
- 1 cup heavy cream
- 1 tbsp butter
- Parmesan to taste
- Salt & Pepper to taste
- Cook the tagliatelle according to the packet instructions. Drain and set aside,
- Wash lemons well and grate the skin (only the yellow part) and set aside in a bowl.
- Chop the lemons in quarters. In a large skillet, add the butter and lemons over medium heat. Salt lightly and let the lemons brown well. Remove from heat and squeeze to remove juices.
- Heat the pan again over medium heat (wash it before if you don’t want the cream gets a brown color) and add the cream cheese. Let it melt, add the lemon juice, heavy cream, parmesan cheese, thyme, and salt & pepper to taste. Add the tagliatelle and reserved lemon zest and stir until everything is well mixed. Serve with fresh basil.
